What is Dalgona Coffee?
Back when we still had our regular schedule, we would often drop by our favorite café and order a cup before heading to work. Many would question if that $4 daily routine is worth spending rather than making our own coffee at home. Then we go back to the time when we would often say “I just don’t have the time to do it,” now that we do, we’re forced to be creative to keep ourselves busy during the lockdown period.

Dalgona Coffee is made by continuously whipping instant coffee with sugar and hot water until it has so much air in it, that the consistency becomes airy, frothy, and thick. Half of the glass would then be filled up with ice and milk, depending on your preference you can use whole milk, low-fat milk, almond milk, etc. it is then topped off with several scoops of the foamy coffee mixture and voila! It’s perfect to serve in any transparent glass so that one could see the layers of the Dalgona Coffee where the milk separates from the coffee… and to take a picture for your Instagram Story of course.

It’s very simple to make but would require a good arm workout if you don’t have an electric mixer. Some say Dalgona Coffee is just the reverse version of a Cappuccino, while others say it originated from the Indian version called Phenti Hui, the only difference is that the coffee mixture goes in first then milk is poured on top. Dalgona Coffee Recipe
Ingredients
2 tablespoons powdered instant coffee, 2 tablespoons white sugar, half a cup of milk of your choice, and ice.

Steps
- Step 1: mix the powdered instant coffee with white sugar and 2 tablespoons of hot or boiling water in a bowl.
- Step 2: use an electric hand mixer or a whisk to mix the ingredients. Mix until it’s light brown, thick and foamy.
- Step 3: Fill the glass with ice then pour about ¾ of the glass with the milk of your choice. Then add scoops of the coffee mixture on top until the glass is full.
- Optional: Serve the drink with either a straw or a long spoon for mixing.

For non-coffee drinkers, and you don’t want your sleep get disturbed by any caffeine. this caffeine-free drink with Matcha tea powder as an alternative is perfect for the lockdown period. The recipe is similar to the Dalgona Coffee recipe but instead, we will be using Matcha powder and an all-purpose cream/whipped cream.
Ingredients
2 tablespoons powdered Matcha tea, 2 tablespoons white sugar, 2 tablespoons of chilled all-purpose cream/whipped cream, half a cup of milk of your choice, and ice.

Steps
- Step 1: mix the powdered Matcha tea, white sugar, and whip cream in a bowl.
- Step 2: use an electric hand mixer or a whisk to mix the ingredients together. Mix until it’s thick and foamy.
- Step 3: fill the glass with ice then pour about ¾ of the glass with the milk of your choice. Then add scoops of the Matcha mixture on top until the glass is full.
- Optional: serve the drink with either a straw or a long spoon for mixing.
Dalgona Coffee Jelly Recipe
Another twist to recreate with Dalgona Coffee is by adding some coffee jelly sinkers. Ingredients
For the Dalgona Coffee: 2 tablespoons powdered instant coffee, 2 tablespoons white sugar, half a cup of milk of your choice, and ice.
For the Coffee Jelly: 1 box of unflavored gelatin (any brand), 3 cups of water (unless stated otherwise on the instructions), 2 tablespoons of instant coffee, and 1 teaspoon of sugar.

For the Coffee Jelly: mixing bowl, saucepan and baking dish
Steps
- Step 1: boil 3 cups of water then add the powdered coffee and sugar. Mix until dissolved.
- Step 2: in a mixing bowl, pour the gelatin powder and add 1 cup of cold water. Mix and wait for gelatin powder to bloom.
- Step 3: gradually add the boiling water with coffee and sugar mixture onto the mixing bowl. Mix continuously until all gelatin powder is fully dissolved.
- Step 4: transfer mixture to a baking dish and let it cool down in the refrigerator for about 3 hours.
- Step 5: cut the gelatin into cubes then transfer to a storing container for easy storing and serving.
- Step 6: mix the powdered instant coffee with white sugar and 2 tablespoons of hot or boiling water in a bowl.
- Step 7: use an electric hand mixer or a whisk to mix the ingredients together. Mix until it’s light brown, thick and foamy.
- Step 8: Add 2 to 3 tablespoons of coffee jelly into a tall glass, pour chilled milk of your choice and fill up to ¾ of the glass.
- Step 9: Then add scoops of the coffee mixture on top until the glass is full. Serve with a wide straw.
Torched Mocha Dalgona Coffee Recipe
Big fan of Mocha drinks? No problem, you can have it your way during this lockdown period. Chocolate milk can be easily incorporated in this Dalgona Coffee recipe.
Ingredients
2 tablespoon powdered instant coffee, 1 teaspoon of brown sugar, 2 tablespoons white sugar, 2 tablespoons of chilled all-purpose cream/whipped cream, half a cup of ready-to-drink chocolate milk, and ice.

Electric hand mixer or whisk, piping bag, and a cooking torch
Steps
- Step 1: mix the powdered instant coffee with white sugar and chilled all-purpose cream/whipped cream in a bowl.
- Step 2: use an electric hand mixer or a whisk to mix the ingredients together. Mix until it’s light brown, thick and foamy.
- Step 3: Fill the glass with ice then pour about ¾ of the glass with the chocolate milk.
- Step 4: scoop all of the coffee mixture into a piping bag and pipe the mixture around the glass until it forms that pyramid topping.
- Step 5: sprinkle the coffee mixture with a teaspoon of brown sugar and lightly torch to caramelize. Immediately serve with a straw. (Safety first, this step is optional, only do this step if you are knowledgeable of how to use a cooking torch.)
Taro Boba Milk Tea Recipe
Having your boba milk tea cravings this lockdown period? You are not the only one! Luckily, it is super easy to make and the only downside to making your boba milk tea at home is only cooking the exact amount of tapioca pearls that will be used for the serving you need. It will get tempting to cook a large batch for your next glass of boba milk tea, but the tapioca pearls, if not consumed immediately, will start to get rubbery with a hard center after 4 hours from cooking. So practice patience while on lockdown and only cook small batches of tapioca pearls.
Ingredients
1 teabag of jasmine tea, tapioca pearls, ice cubes, water, 1 cup of heavy cream milk, 1 tablespoon taro powder

Extra-wide straw, pot, and pan
Steps
- Step 1: Boil at least 5 cups of water in a pot then add tapioca balls, cover with the lid, and cook for 15 minutes in medium heat. Stir once in a while to avoid sticking. Once cooked, drain the water.
- Step 2: Fill a mug with hot water and steep jasmine tea for 10 minutes. Then remove the tea bag and add the taro powder, stir until dissolved.
- Step 3: With a pan, stir ¼ cup of hot water with ¼ cup of brown sugar, stir until the consistency is thick. Then let the brown sugar syrup cool down.
- Step 4: Mix brown sugar syrup with tapioca balls.
- Step 5: Prepare your tall glass. Add 2-3 tablespoon of tapioca balls, then add some ice.
- Step 6: Fill the glass with jasmine tea with taro powder. Put a large straw and enjoy!

4 cans cream soda, ¼ cup butterscotch syrup, 1 cup chilled heavy cream, 2 tablespoons sugar, 2 tablespoons pure vanilla extract, and ¼ cup melted butter

Stand mixer, mixing bowl, spatula, and pitcher.
Steps
Step 1: Using a stand mixer, beat cream until stiff peaks form. (If you do not have a stand mixer, a hand mixer or a regular whisk will be fine, just mix for 15 minutes.) Then sugar, vanilla extract, and butter and mix until fully combined.
Step 2: Mix butterscotch syrup with cream soda in a pitcher
